Creamy strawberry cheesecake popsicles that capture the delightful flavors of summer without using yogurt.

Ingredients

  • 2 cups fresh strawberries
  • 8 ounces cream cheese, softened
  • ½ cup heavy cream
  • ⅔ cup granulated sugar
  • 1 cup fresh strawberries, chopped
  • 1¼ cups confectioner’s sugar
  • 2 tablespoons lemon juice
  • Pinch of salt

Instructions

  1. Blend ¾ cup of chopped strawberries with softened cream cheese, heavy cream, and confectioner’s sugar until smooth.
  2. Add lemon juice and a pinch of salt, mixing well.
  3. Taste and adjust sweetness if needed.
  4. Gently fold in the remaining ¼ cup of chopped strawberries.
  5. Pour the mixture into popsicle molds.
  6. Insert wooden sticks and freeze for at least 4 hours.
  7. To unmold, run hot water over the outside of the mold for 5-10 seconds and gently pull on the stick.

Notes

These paletas can be stored in the freezer for up to 2 months. Feel free to customize with different fruits or flavors!
