- 2 cups fresh strawberries
- 8 ounces cream cheese, softened
- ½ cup heavy cream
- ⅔ cup granulated sugar
- 1 cup fresh strawberries, chopped
- 1¼ cups confectioner’s sugar
- 2 tablespoons lemon juice
- Pinch of salt
Instructions
- Blend ¾ cup of chopped strawberries with softened cream cheese, heavy cream, and confectioner’s sugar until smooth.
- Add lemon juice and a pinch of salt, mixing well.
- Taste and adjust sweetness if needed.
- Gently fold in the remaining ¼ cup of chopped strawberries.
- Pour the mixture into popsicle molds.
- Insert wooden sticks and freeze for at least 4 hours.
- To unmold, run hot water over the outside of the mold for 5-10 seconds and gently pull on the stick.
Notes
These paletas can be stored in the freezer for up to 2 months. Feel free to customize with different fruits or flavors!
