- 2 cups graham cracker crumbs
- 1 cup unsalted butter, melted
- 16 ounces (450 g) cream cheese, softened
- 2/3 cup (135 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 tbsp all-purpose flour
- 2 cups chopped fresh strawberries
- 1/3 cup granulated sugar for topping
- 1 tbsp lemon juice
- 1 tbsp cornstarch
Instructions
- Preheat oven to 325°F (160°C) and line a 9×13-inch baking pan with parchment paper.
- Press the graham cracker crumbs mixed with melted butter into the bottom of the pan and bake for 8-10 minutes.
- Beat cream cheese and sugar together until smooth. Add eggs, vanilla, sour cream, and flour, and mix until just combined.
- Pour the cheesecake mixture over the warm crust and bake for 25-30 minutes until the center barely jiggles.
- Cool the cheesecake layer while preparing the topping.
- In a saucepan, simmer chopped strawberries, sugar, and lemon juice. Stir in cornstarch mixed with water and cook until thickened.
- Cool the strawberry topping before spreading over the cheesecake layer.
- Refrigerate for at least 4 hours or overnight before slicing into bars.
Notes
Chilling overnight improves the texture dramatically. For best results, use room-temperature cream cheese to avoid cracks.
