- 2 cups fresh strawberries, sliced
- 2 ½ cups cake flour
- 1 ½ cups granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup whole milk
- 8 oz cream cheese, softened
- 3 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease two round cake pans and line with parchment paper.
- Wash and slice the strawberries; set aside one cup for the batter and another cup for decoration.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, followed by the vanilla extract.
- Gradually mix in the dry ingredients, alternating with milk, until just combined. Gently fold in the sliced strawberries.
- Pour the batter into the prepared pans and bake for 25–30 minutes or until a toothpick inserted comes out clean. Allow the cakes to cool completely before frosting.
- For the frosting, beat the softened cream cheese with powdered sugar until smooth. Frost the cooled cakes generously and decorate with the remaining strawberries.
Notes
Use fresh strawberries for the best flavor. Let butter and eggs sit at room temperature before mixing for a fluffier cake.
