Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened (for filling)
  • 1 1/2 cups powdered sugar
  • 1 cup marshmallow fluff
  • Food coloring gels or natural colors
  • Candy eyes, festive sprinkles, and other edible decorations

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat the sugar and butter until light and fluffy.
  4. Add the egg and vanilla, then mix well.
  5. Slowly incorporate the dry ingredients, alternating with buttermilk until smooth.
  6. Drop spoonfuls of batter onto a lined baking sheet, leaving space for spreading.
  7. Bake for about 9 minutes, until cookies are soft.
  8. Let cool, then beat the filling ingredients together until combined.
  9. Color the filling and spread or pipe it onto half of the cookies.
  10. Sandwich with the remaining cookies and decorate with candy eyeballs and sprinkles.
