- 1/2 cup unsalted butter, softened (for filling)
- 1 1/2 cups powdered sugar
- 1 cup marshmallow fluff
- Food coloring gels or natural colors
- Candy eyes, festive sprinkles, and other edible decorations
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix the flour, cocoa powder, baking soda, and salt.
- In another bowl, beat the sugar and butter until light and fluffy.
- Add the egg and vanilla, then mix well.
- Slowly incorporate the dry ingredients, alternating with buttermilk until smooth.
- Drop spoonfuls of batter onto a lined baking sheet, leaving space for spreading.
- Bake for about 9 minutes, until cookies are soft.
- Let cool, then beat the filling ingredients together until combined.
- Color the filling and spread or pipe it onto half of the cookies.
- Sandwich with the remaining cookies and decorate with candy eyeballs and sprinkles.
