Description
A simple yet elegant salmon fillet stuffed with a flavorful mixture of spinach, feta, and cream cheese, brightened with lemon zest.

- 4 (6-ounce) salmon fillets
- 2 cups fresh spinach
- 2 oz (60 g) cream cheese
- 1/2 cup crumbled feta
- 1 tbsp lemon zest
- 1 tbsp chopped fresh dill
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 shallot, minced
- Salt and pepper, to taste
Instructions
- Wilt spinach with garlic and shallot in a skillet over medium heat.
- Remove from heat, cool, and mix with feta, cream cheese, lemon zest, dill, olive oil, salt, and pepper.
- Cut a 1–1½ inch pocket into each salmon fillet.
- Stuff each fillet with approximately 3–4 tablespoons of filling.
- Optionally, sear the skin-side down in a hot skillet for 1–2 minutes.
- Bake on a rimmed sheet at 400°F (200°C) for 12–18 minutes until cooked through (125–130°F/52–55°C).
- Let rest for 3–4 minutes before serving.
Notes
Squeeze spinach to remove excess moisture before mixing in the filling. Chill filling for easier stuffing.
