Description

A simple yet elegant salmon fillet stuffed with a flavorful mixture of spinach, feta, and cream cheese, brightened with lemon zest.


Ingredients

Scale
  • 4 (6-ounce) salmon fillets
  • 2 cups fresh spinach
  • 2 oz (60 g) cream cheese
  • 1/2 cup crumbled feta
  • 1 tbsp lemon zest
  • 1 tbsp chopped fresh dill
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 shallot, minced
  • Salt and pepper, to taste

Instructions

  1. Wilt spinach with garlic and shallot in a skillet over medium heat.
  2. Remove from heat, cool, and mix with feta, cream cheese, lemon zest, dill, olive oil, salt, and pepper.
  3. Cut a 1–1½ inch pocket into each salmon fillet.
  4. Stuff each fillet with approximately 3–4 tablespoons of filling.
  5. Optionally, sear the skin-side down in a hot skillet for 1–2 minutes.
  6. Bake on a rimmed sheet at 400°F (200°C) for 12–18 minutes until cooked through (125–130°F/52–55°C).
  7. Let rest for 3–4 minutes before serving.

Notes

Squeeze spinach to remove excess moisture before mixing in the filling. Chill filling for easier stuffing.
