Ingredients

  • 1 sheet puff pastry (thawed if frozen)
  • 2 cups fresh spinach (chopped)
  • 1 cup crumbled feta cheese
  • 2 tablespoons cream cheese (softened)
  • 1 tablespoon olive oil
  • 1 garlic clove (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to smooth it out.
  3. In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, olive oil, minced garlic, oregano, salt, and black pepper. Mix until well combined.
  4. Spread this mixture evenly over the puff pastry sheet.
  5. Roll the pastry tightly from one edge to the other to form a log.
  6. Slice the log into about 1-inch pieces and place them on a baking sheet.
  7. Brush the tops of the pinwheels with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 15-20 minutes, or until they are golden brown and puffed up.
  9. Remove from the oven and let cool slightly before serving.

Notes

Best served warm with a dipping sauce like tzatziki or hummus. Leftovers can be stored in an airtight container in the fridge for up to three days.
