Ingredients

- 1 1/4 cups (300 ml) warm water (about 110°F / 43°C)
- 1 tablespoon honey
- 4 cups (500 g) bread flour
- 1 tablespoon sugar
- 2 teaspoons instant yeast
- 1 1/2 teaspoons salt
- 1 cup (about 4 oz / 115 g) shredded sharp cheddar
- 1–2 finely diced jalapeños (remove seeds for milder heat)
Instructions
- Start by activating yeast in warm water with honey.
- Mix bread flour, sugar, instant yeast, and salt in a bowl.
- Knead in cheddar and jalapeños until smooth, about 8-10 minutes by hand.
- Let the dough rise until doubled, about 1 hour or refrigerate overnight.
- Divide into 8 pieces, shape into balls, and poke holes to form rings.
- Boil each bagel in simmering water with honey and baking soda for 1 minute per side.
- Drain and bake on a preheated baking sheet at 425°F (220°C) for 18–25 minutes until deep golden.
Notes
Serve with cream cheese or use as breakfast sandwich bases. Store at room temperature for 2 days or freeze for 3 months.
