  • 4 boneless skinless chicken thighs or breasts
  • 1 cup buttermilk
  • 2 tablespoons hot sauce
  • 1 ½ cups all-purpose flour
  • ½ cup cornstarch
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Vegetable oil for frying
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • ¼ teaspoon paprika
  • 1 teaspoon hot sauce
  • 4 brioche or sesame burger buns
  • 8 dill pickle slices
  • 1 cup shredded lettuce or greens (optional)

Instructions

  1. In a mixing bowl, combine buttermilk and hot sauce. Add the chicken and marinate for at least 1 hour, or overnight for the best flavor.
  2. In a shallow dish, mix flour, cornstarch, paprika, garlic powder, cayenne, salt, and black pepper.
  3. Remove the chicken from the marinade. Dredge it in the flour mixture, dip back in the buttermilk briefly, and dredge again in the flour mixture for extra crunch.
  4. Heat oil in a skillet to 350°F (175°C). Fry the chicken for 4–6 minutes per side, until golden brown and cooked through. Drain on a rack and let rest for 5 minutes.
  5. In a small bowl, whisk together mayonnaise, Dijon mustard, garlic, paprika, and hot sauce. Adjust the seasoning to your taste.
  6. Lightly toast the buns. Layer on dill pickles, fried chicken, a spoonful of the creamy sauce, and lettuce if desired. Add the top bun and serve immediately.

Notes

For extra crunch, ensure your oil is hot enough before frying. Marinating overnight yields more flavor, but even an hour will suffice.
