- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup butter or oil
- 1 cup brown sugar
- 3/4 cup molasses
- 2 large eggs
- 1 cup milk or buttermilk
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or brush with melted butter.
- In a bowl, whisk together the dry ingredients: flour, baking powder, baking soda, ground ginger, cinnamon, cloves, and salt.
- In another bowl, blend the wet ingredients: butter or oil, brown sugar, molasses, eggs, and milk or buttermilk.
- Combine the wet ingredients into the dry mixture and fold gently until just combined, being careful not to overmix.
- Portion the batter into the muffin tin and bake for 18–22 minutes until a toothpick comes out clean.
- Let cool for 5 minutes in the pan, then transfer to a wire rack.
Notes
For added richness, try folding in chopped candied ginger or topping with a streusel before baking.
