Description

A delicious and easy grilled chicken recipe served with creamy fresh avocado salsa, perfect for summer grilling.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 ripe avocados
  • 1 cup diced tomatoes
  • 1/4 cup finely diced red onion
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Combine olive oil, garlic powder, cumin, paprika, salt, and pepper in a mixing bowl and whisk until smooth to prepare the marinade.
  2. Place chicken breasts in a zip-top bag, pour the marinade over them, seal, and refrigerate for at least 30 minutes.
  3. Mash avocados in a bowl and mix in tomatoes, red onion, lime juice, and cilantro to prepare the avocado salsa.
  4. Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-8 minutes on each side until cooked through.
  5. Let the chicken rest for 5 minutes, then slice and serve topped with avocado salsa.

Notes

For a bit of heat, consider adding diced jalapeños to the avocado salsa.
