A delicious and easy grilled chicken recipe served with creamy fresh avocado salsa, perfect for summer grilling.

- 2 pounds boneless, skinless chicken breasts
- 1/4 cup extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 ripe avocados
- 1 cup diced tomatoes
- 1/4 cup finely diced red onion
- 2 tablespoons freshly squeezed lime juice
- 1/4 cup chopped fresh cilantro
Instructions
- Combine olive oil, garlic powder, cumin, paprika, salt, and pepper in a mixing bowl and whisk until smooth to prepare the marinade.
- Place chicken breasts in a zip-top bag, pour the marinade over them, seal, and refrigerate for at least 30 minutes.
- Mash avocados in a bowl and mix in tomatoes, red onion, lime juice, and cilantro to prepare the avocado salsa.
- Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-8 minutes on each side until cooked through.
- Let the chicken rest for 5 minutes, then slice and serve topped with avocado salsa.
Notes
For a bit of heat, consider adding diced jalapeños to the avocado salsa.
