- 1 lb bite-sized chicken (cut into 1-inch pieces)
- 2 tbsp olive oil
- 1 onion (diced)
- 1 bell pepper (diced)
- 2 tsp chili powder
- 1 tsp cumin
- 1 can (15 oz) black beans (drained)
- 1 cup corn (frozen or canned)
- 12 oz short pasta (like penne or rotini)
- 2 cups low-sodium chicken broth
- 1 cup salsa (or canned tomatoes)
- 1 cup shredded cheddar or Monterey Jack cheese
- Salt to taste
- Cilantro (for garnish)
- Green onions (for garnish)
- Lime (for garnish)
Instructions
- In a large skillet, heat olive oil over medium-high heat and brown the chicken pieces.
- Add diced onions and bell pepper, sauté until soft.
- Stir in chili powder, cumin, and salt.
- Add black beans, corn, pasta, and chicken broth. Bring to a simmer.
- Cover and simmer for 8-10 minutes or until pasta is al dente.
- Stir in the cheese and let rest for 2-3 minutes before serving.
- Garnish with cilantro, green onions, and a squeeze of lime.
Notes
For added flavor, experiment with different spices or add more vegetables. Leftovers taste even better the next day.
