Description

Deliciously soft cookies filled with a rich date mixture that melt in your mouth.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped dates
  • 1/4 cup water
  • 1/4 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, cream butter and sugars until light and fluffy.
  4. Gradually add the flour mixture, mixing until just combined.
  5. For the filling, simmer chopped dates, water, and sugar until soft and blended, then cool.
  6. Roll the dough into small circles, place a spoonful of date filling in the center, and fold the dough over to seal.
  7. Place on a baking sheet and bake for 12-15 minutes until edges are golden.
  8. Let cool before serving.

Notes

Use fresh dates for the best flavor and texture. Chill the dough if it gets too warm.
