- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped dates
- 1/4 cup water
- 1/4 cup granulated sugar (for filling)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, cream butter and sugars until light and fluffy.
- Gradually add the flour mixture, mixing until just combined.
- For the filling, simmer chopped dates, water, and sugar until soft and blended, then cool.
- Roll the dough into small circles, place a spoonful of date filling in the center, and fold the dough over to seal.
- Place on a baking sheet and bake for 12-15 minutes until edges are golden.
- Let cool before serving.
Notes
Use fresh dates for the best flavor and texture. Chill the dough if it gets too warm.
