- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup sour cream
- 2 tsp pure vanilla extract
- 2 tsp ground cinnamon
- 3 large eggs
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the graham cracker crumbs, melted butter, and ¼ cup sugar. Press this mixture into the bottom of a springform pan.
- In another bowl, beat the cream cheese until smooth. Gradually mix in the sour cream and the remaining sugar.
- Add the vanilla and cinnamon to the cream cheese mixture.
- Beat in the eggs one at a time until just combined.
- Pour the filling into the crust and bake for 50-60 minutes or until set but slightly jiggly in the center.
- Cool the cheesecake inside the oven with the door slightly open for an hour.
- Refrigerate for at least four hours before serving.
Notes
Serve chilled with a sprinkle of cinnamon or whipped cream. Store leftovers covered in the refrigerator for up to a week.
