Ingredients

- 3–4 lbs chuck roast
- 1 cup vinegar
- 1 cup water
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp sugar
- 2 bay leaves
- 1 tsp thyme
- Optional: carrots and potatoes for cooking
Instructions
- Marinate the beef roast in a mixture of vinegar, water, onions, and spices for at least 24 hours.
- Preheat a skillet and sear the beef on all sides until browned.
- Transfer seared beef to the slow cooker and pour the remaining marinade over it.
- Set the slow cooker to low and cook for 8 hours.
- Serve over mashed potatoes or spaetzle and garnish with parsley.
Notes
For deeper flavor, feel free to marinate the beef for up to 48 hours.
