A comforting classic of marinated beef in a rich, tangy sauce cooked in a slow cooker.

Ingredients

  • 34 lbs chuck roast
  • 1 cup vinegar
  • 1 cup water
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp sugar
  • 2 bay leaves
  • 1 tsp thyme
  • Optional: carrots and potatoes for cooking

Instructions

  1. Marinate the beef roast in a mixture of vinegar, water, onions, and spices for at least 24 hours.
  2. Preheat a skillet and sear the beef on all sides until browned.
  3. Transfer seared beef to the slow cooker and pour the remaining marinade over it.
  4. Set the slow cooker to low and cook for 8 hours.
  5. Serve over mashed potatoes or spaetzle and garnish with parsley.

Notes

For deeper flavor, feel free to marinate the beef for up to 48 hours.
