Description

A flavorful and nutritious slow cooker stew featuring chickpeas, butternut squash, and warm spices that create a comforting dish perfect for any occasion.


Ingredients

  • 2 cans chickpeas, rinsed and drained
  • 1 butternut squash, peeled and chopped
  • 1 can diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp cinnamon
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • Fresh cilantro for garnish

Instructions

  1. In a skillet, sauté onions and garlic until fragrant.
  2. Add chickpeas, butternut squash, diced tomatoes, spices, and vegetable broth to the slow cooker.
  3. Transfer the sautéed onions and garlic into the slow cooker.
  4. Season with salt and pepper, and stir to combine.
  5. Cook on low for 6-8 hours or until the butternut squash is tender.
  6. Serve hot, garnished with fresh cilantro.

Notes

For best results, cut the butternut squash into uniform pieces for even cooking.
