- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes in oil, drained
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Brown the chicken breasts in a skillet over medium-high heat.
- Layer the browned chicken in the slow cooker.
- Add sun-dried tomatoes, garlic, and Italian seasoning on top of the chicken.
- In a separate bowl, mix the heavy cream with chicken broth and pour over the chicken.
- Cover and cook on low for 4-6 hours until chicken is tender.
- For a thicker sauce, whisk in a cornstarch slurry and cook on high for an additional 10 minutes.
- Serve over pasta, rice, or with crusty bread.
