- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup corn
- 1 onion, chopped
- 3 cloves garlic, minced

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups low-sodium chicken broth
- Cilantro, for garnish

Instructions
- Sauté onions and garlic in a pan until fragrant.
- Layer seasoned chicken breasts, beans, tomatoes, corn, and spices in the slow cooker.
- Pour in the chicken broth.
- Cook on low for 6-8 hours or high for 4 hours until the chicken is tender.
- Shred chicken with a fork and stir to combine.
- Serve in bowls topped with cilantro, lime, and sour cream.
Notes
For a creamier texture, add avocado or coconut cream as a topping. This chili freezes well, so consider making a double batch.
