Ingredients

  • 1 pound chicken breasts
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • Cilantro, for garnish
  • Lime wedges, for serving
  • Sour cream, for serving

Instructions

  1. Sauté onions and garlic in a pan until fragrant.
  2. Layer seasoned chicken breasts, beans, tomatoes, corn, and spices in the slow cooker.
  3. Pour in the chicken broth.
  4. Cook on low for 6-8 hours or high for 4 hours until the chicken is tender.
  5. Shred chicken with a fork and stir to combine.
  6. Serve in bowls topped with cilantro, lime, and sour cream.

Notes

For a creamier texture, add avocado or coconut cream as a topping. This chili freezes well, so consider making a double batch.
