Description

Ingredients

Scale
  • 1 ripe avocado
  • 1/2 teaspoon flaky sea salt
  • 1 teaspoon lemon juice
  • Pinch of chili flakes
  • 12 large eggs
  • 1 teaspoon olive oil (for frying)
  • 2 slices good-quality bread (sourdough or whole grain)
  • Cracked black pepper, to taste
  • Extra-virgin olive oil, for drizzling

Instructions

  1. Toast the bread until golden, about 2–3 minutes.
  2. Mash the avocado with salt, lemon juice, and chili flakes in a bowl.
  3. Cook the eggs to your preference: fry in olive oil over medium-low heat for 3–4 minutes or poach in simmering water for 3 minutes.
  4. Spread the mashed avocado on the toast, top with the egg, and finish with cracked black pepper and a drizzle of olive oil.

Notes

Control heat for eggs to prevent rubbery whites. Use a fork to mash avocado for better texture.
