A quick and flavorful one-pan meal featuring kielbasa and roasted vegetables glazed in a sweet honey-garlic sauce.

Ingredients

Scale
  • 1 lb kielbasa, sliced on the bias
  • 1.5 lb bite-sized potatoes
  • 1 red bell pepper, chopped
  • 1 red onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup honey
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon apple cider vinegar
  • 3 minced garlic cloves

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the kielbasa and toss with potatoes, bell pepper, onion, olive oil, smoked paprika, salt, and pepper.
  3. Whisk together honey, soy sauce, apple cider vinegar, and minced garlic to create the glaze.
  4. Toss half of the glaze onto the mixture on the sheet pan.
  5. Roast for 25–30 minutes, flipping once at 15 minutes, until vegetables are tender and caramelized.

Notes

For extra crispness, finish under the broiler for 1–2 minutes; watch closely to prevent burning.
