Ingredients

- 1 lb kielbasa, sliced on the bias
- 1.5 lb bite-sized potatoes
- 1 red bell pepper, chopped
- 1 red onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup honey
- 2 tablespoons soy sauce (or tamari)
- 1 tablespoon apple cider vinegar
- 3 minced garlic cloves
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the kielbasa and toss with potatoes, bell pepper, onion, olive oil, smoked paprika, salt, and pepper.
- Whisk together honey, soy sauce, apple cider vinegar, and minced garlic to create the glaze.
- Toss half of the glaze onto the mixture on the sheet pan.
- Roast for 25–30 minutes, flipping once at 15 minutes, until vegetables are tender and caramelized.
Notes
For extra crispness, finish under the broiler for 1–2 minutes; watch closely to prevent burning.
