Instructions
- Whisk the eggs with milk or cream and salt until combined.
- Heat an 8-inch nonstick skillet over low to medium-low heat, then add butter and let it melt without browning.
- Pour in the eggs and stir gently and continuously with a silicone spatula.
- When the curds are mostly set but still glossy, remove from heat and stir for an additional 30 seconds.
- Season with freshly ground pepper and serve immediately.
Notes
