Ingredients

  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • Salt to taste
  • Water as needed for blending

Instructions

  1. Drain and rinse soaked cashews.
  2. In a high-speed blender or food processor, combine cashews, nutritional yeast, lemon juice, garlic, oregano, and salt.
  3. Blend until smooth, adding water as necessary to achieve a creamy consistency.
  4. Transfer the mixture to a bowl and refrigerate for at least 1 hour to firm up.
  5. Serve crumbled over salads, mixed into pasta, or spread on toast.
