Ingredients

  • 1 lb flank or skirt steak
  • Salt and pepper to taste
  • Olive oil
  • 1 large sweet onion
  • 1 tbsp butter or oil
  • Thick tomato slices
  • Toasted sourdough or ciabatta bread
  • Garlic mayo (optional)
  • Arugula (optional)
  • Shaved Parmesan (optional)

Instructions

  1. Season steak with salt, pepper, and a light brush of olive oil.
  2. Sear the steak in a preheated cast-iron skillet for about 3–4 minutes per side for medium-rare.
  3. Rest steak for 5–10 minutes, then slice thinly against the grain.
  4. Slice the sweet onion and sauté in 1 tbsp butter or oil over medium heat until softened and just starting to caramelize, about 8 minutes.
  5. Assemble sandwiches with toasted bread, steak slices, sautéed onions, and thick tomato slices.
