Ingredients

  • Ramen noodles – 100g per serving
  • Miso paste – 3 tablespoons (red miso preferred)
  • Garlic – 4 cloves (minced or smashed)
  • Ginger – 1 tablespoon (fresh, minced)
  • Spicy chili bean paste – 1 tablespoon (adjust to taste)
  • Broth (chicken or veggie) – 4 cups
  • Soy sauce – 2 tablespoons
  • Toasted sesame oil – 1 teaspoon (for garnish)
  • Toppings: soft boiled eggs, green onions, nori, corn, bamboo shoots, spicy pineapple salsa (optional)

Instructions

  1. In a pot, fry garlic and ginger until fragrant.
  2. Add the miso and spicy chili paste, stirring until it sizzles.
  3. Pour in the broth and bring it to a bubble.
  4. Near the end of cooking, add the ramen noodles until they are chewy.
  5. Serve with desired toppings and a drizzle of toasted sesame oil.

Notes

Taste as you go to adjust the spice level to your preference. Leftover broth can be frozen for later use, just keep noodles separate.
