- 1 can (14 oz) salmon, drained
- 1 cup breadcrumbs
- 2 large eggs
- 1/4 cup fresh herbs (parsley, dill, or cilantro)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 ripe avocados
- 1/2 cup Greek yogurt
- Juice of 1 lime
- Spices for sauce (cumin, paprika)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, mix the salmon, breadcrumbs, eggs, herbs, and spices until well combined.
- Chill the mixture in the fridge for 15 minutes to help it bind.
- Form the mixture into balls and place them on a lined baking sheet.
- Bake for 15 minutes or until golden brown.
- For the avocado sauce, blend avocados, Greek yogurt, lime juice, and spices until smooth.
- Serve the salmon balls with the creamy avocado sauce on the side for dipping.
Notes
Use parchment paper for easy cleanup and to prevent sticking. Experiment with different herbs and spices for varied flavors.
