Instructions
- Preheat oven to 375°F (190°C).
- Cut bell peppers in half lengthwise and remove seeds.
- Cook rice according to package directions.
- Sauté onions and garlic in olive oil until fragrant.
- Add ground turkey to the skillet, cooking until browned.
- Mix in cooked rice, diced tomatoes, and Italian seasonings. Simmer for a few minutes.
- Fill pepper halves with the turkey mixture and top with shredded Asiago.
- Bake in the preheated oven for 30-35 minutes or until peppers are tender and cheese is melted.
Notes
Use leftover rice for the filling to prevent it from becoming too mushy. Experiment with different cheeses for variation.
