Ingredients

  • 2 yellow onions, sliced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Spread the green beans on a sheet pan and toss with olive oil, salt, and pepper.
  3. Roast in the oven until slightly browned, about 15-20 minutes.
  4. While the beans are roasting, caramelize the onions in a pan over medium-low heat, stirring occasionally for 20-30 minutes until golden brown.
  5. If the pan dries out, add a splash of water or broth.
  6. Toss the roasted green beans with the caramelized onions.
  7. Serve warm, optionally topped with Parmesan cheese or crispy bacon.
