Ingredients

  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce (adjust to taste)
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Fresh cilantro or green onions for garnish

Instructions

  1. Press the silken tofu gently to remove excess moisture.
  2. Slice vegetables into bite-sized pieces.
  3. Heat vegetable oil in a non-stick pan over high heat.
  4. Add garlic and ginger, sauté for 30 seconds until fragrant.
  5. Add vegetables and stir-fry for 3-4 minutes until vibrant and tender-crisp.
  6. Carefully add silken tofu, soy sauce, and chili sauce, stirring gently to combine.
  7. Cook for an additional 2-3 minutes until heated through.
  8. Serve over rice or noodles, garnished with fresh herbs.
