Description

Delicious meatballs combined with sweet pineapple and rich teriyaki sauce, perfect for weeknight meals or parties.


Ingredients

Scale
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup breadcrumbs
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup pineapple juice
  • 1/4 cup soy sauce
  • 1 tsp ginger, grated
  • Salt and pepper, to taste
  • Fresh pineapple, for garnish
  • Sesame seeds and green onions, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground meat, breadcrumbs, onion, garlic, and egg until just combined.
  3. Form mixture into uniform meatballs, about 1 inch in size.
  4. Place meatballs on a baking sheet and bake for 15 minutes.
  5. While the meatballs are baking, prepare the teriyaki sauce by mixing pineapple juice, soy sauce, and ginger in a saucepan over low heat.
  6. Once meatballs are cooked, toss them gently in the teriyaki sauce to coat.
  7. Serve over rice with optional garnishes of sesame seeds and green onions.

Notes

You can use a cookie scoop to ensure meatballs are uniform in size. Fresh pineapple enhances the flavor.
