Delicious meatballs combined with sweet pineapple and rich teriyaki sauce, perfect for weeknight meals or parties.
Ingredients

- 1 lb ground meat (beef, turkey, or chicken)
- 1 cup breadcrumbs
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup pineapple juice
- 1/4 cup soy sauce
- 1 tsp ginger, grated
- Salt and pepper, to taste
- Fresh pineapple, for garnish
- Sesame seeds and green onions, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix ground meat, breadcrumbs, onion, garlic, and egg until just combined.
- Form mixture into uniform meatballs, about 1 inch in size.
- Place meatballs on a baking sheet and bake for 15 minutes.
- While the meatballs are baking, prepare the teriyaki sauce by mixing pineapple juice, soy sauce, and ginger in a saucepan over low heat.
- Once meatballs are cooked, toss them gently in the teriyaki sauce to coat.
- Serve over rice with optional garnishes of sesame seeds and green onions.
Notes
You can use a cookie scoop to ensure meatballs are uniform in size. Fresh pineapple enhances the flavor.
