- 1 1⁄2 pounds ground beef (80/20 blend)
- 1 cup breadcrumbs (Panko or regular)
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup milk
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper, to taste

- 2 medium onions, thinly sliced

Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine the ground beef, breadcrumbs, egg, chopped onion, minced garlic, milk, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined.
- Form the meat mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
- Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C). Let it rest for 10 minutes before slicing.
- While the meatloaf is baking, melt the butter in a medium saucepan over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for 15-20 minutes until they are golden brown and caramelized.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Sprinkle the flour over the onions and garlic, stirring to combine. Cook for 1 minute to form a roux.
- Gradually add the beef broth and Worcestershire sauce, stirring constantly until the gravy thickens, about 5-7 minutes. Season with salt and pepper to taste.
- Slice the meatloaf and serve it with the caramelized onion gravy poured over the top. Enjoy with mashed potatoes, roasted vegetables, or your favorite side dish!
Notes
Let leftover meatloaf cool before storing. It can be kept in the refrigerator for up to four days or frozen for up to three months.
