Ingredients

- 2 lbs ground meats (1.5 lb ground beef + 0.5 lb ground pork)
- 1 cup fresh breadcrumbs soaked in 1/2 cup milk
- 2 beaten eggs
- 1 small finely chopped onion
- 2 minced garlic cloves
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 6–8 bacon strips
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
Instructions
- Preheat oven to 350°F (175°C).
- Mix together ground meats, soaked breadcrumbs, beaten eggs, onion, garlic, Worcestershire sauce, salt, pepper, and thyme.
- Shape mixture into a loaf on a baking sheet or in a lightly oiled loaf pan.
- Brush the top with a glaze made from ketchup, brown sugar, and apple cider vinegar.
- Lay bacon strips across the top of the meatloaf.
- Bake for 55-65 minutes, or until the internal temperature reaches 160°F (71°C).
- Let rest for 10-15 minutes before slicing.
Notes
For best results, use a thermometer to ensure the meatloaf reaches 160°F (71°C). Letting it rest helps keep it moist.
