Description

A cozy, flavorful meatloaf topped with crispy bacon and packed with deep, homey flavors.


Ingredients

  • 2 lbs ground meats (1.5 lb ground beef + 0.5 lb ground pork)
  • 1 cup fresh breadcrumbs soaked in 1/2 cup milk
  • 2 beaten eggs
  • 1 small finely chopped onion
  • 2 minced garlic cloves
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 68 bacon strips
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix together ground meats, soaked breadcrumbs, beaten eggs, onion, garlic, Worcestershire sauce, salt, pepper, and thyme.
  3. Shape mixture into a loaf on a baking sheet or in a lightly oiled loaf pan.
  4. Brush the top with a glaze made from ketchup, brown sugar, and apple cider vinegar.
  5. Lay bacon strips across the top of the meatloaf.
  6. Bake for 55-65 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Let rest for 10-15 minutes before slicing.

Notes

For best results, use a thermometer to ensure the meatloaf reaches 160°F (71°C). Letting it rest helps keep it moist.
