Description

A cozy, flavorful meatloaf topped with crispy bacon that keeps the inside moist and tender. Perfect for weeknight dinners and easy to scale for gatherings.


Ingredients

  • 1.5 lb ground beef
  • 0.5 lb ground pork
  • 1 cup fresh breadcrumbs soaked in 1/2 cup milk
  • 2 beaten eggs
  • 1 small finely chopped onion
  • 2 minced garlic cloves
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 68 strips of bacon
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix together ground meats, soaked breadcrumbs, eggs, onion, garlic, Worcestershire sauce, salt, pepper, and thyme until just combined.
  3. Shape the mixture into a loaf on a baking sheet or in a loaf pan.
  4. In a separate bowl, combine ketchup, brown sugar, and apple cider vinegar to create a glaze.
  5. Brush the meatloaf with the glaze and lay bacon strips across the top.
  6. Bake in the preheated oven for 55–65 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest for 10–15 minutes before slicing to serve.

Notes

For best results, use a meat thermometer to ensure correct cooking temperature. Pre-cook bacon for better crispness.
