- 1.5 lb ground beef
- 0.5 lb ground pork
- 1 cup fresh breadcrumbs soaked in 1/2 cup milk
- 2 beaten eggs
- 1 small finely chopped onion
- 2 minced garlic cloves
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 6–8 strips of bacon
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix together ground meats, soaked breadcrumbs, eggs, onion, garlic, Worcestershire sauce, salt, pepper, and thyme until just combined.
- Shape the mixture into a loaf on a baking sheet or in a loaf pan.
- In a separate bowl, combine ketchup, brown sugar, and apple cider vinegar to create a glaze.
- Brush the meatloaf with the glaze and lay bacon strips across the top.
- Bake in the preheated oven for 55–65 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10–15 minutes before slicing to serve.
Notes
For best results, use a meat thermometer to ensure correct cooking temperature. Pre-cook bacon for better crispness.
