A simple yet savory recipe for roasted cabbage slices with garlic butter that transforms cabbage into a delightful side dish.


Ingredients

  • 1 large green cabbage (or savoy cabbage)
  • 4 tablespoons butter (salted or unsalted)
  • 3 to 5 garlic cloves, finely minced (or 1 to 1.5 teaspoons garlic powder)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Optional: smoked paprika, red pepper flakes, lemon zest, or grated parmesan

Instructions

  1. Heat your oven to 425°F (220°C). Line a sheet pan with parchment paper for easier cleanup.
  2. Slice the cabbage into rounds about 3/4 to 1 inch thick, keeping the core in each slice.
  3. Melt butter and olive oil together, then stir in garlic, salt, and pepper. Add red pepper flakes if desired.
  4. Place cabbage slices on the pan and brush both sides with the garlic butter mixture.
  5. Roast for about 18 minutes, flip gently, then roast another 12 to 18 minutes until edges are golden and crisp.
  6. Taste and finish with a sprinkle of salt, a squeeze of lemon, or parmesan if desired.

Notes

Slice thickness is key; aim for about 1 inch for the best texture. Don’t forget to brush both sides of the cabbage slices for even flavor.
