A cozy and comforting dish that combines tender chicken with flavorful garlic parmesan potatoes, all made effortlessly in a crockpot.

- 2 lbs boneless skinless chicken thighs
- 1.5 lbs baby potatoes or Yukon golds, cut into bite-sized chunks
- 4 cloves fresh minced garlic
- 1 cup freshly grated Parmesan cheese
- 4 tablespoons butter, melted
- 1 cup chicken broth
- 2 teaspoons Italian seasoning
- Salt and black pepper to taste
- Optional: a pinch of paprika, chopped parsley for garnish
Instructions
- Prep the potatoes. Wash them, cut them into chunks, and toss them with a pinch of salt and pepper.
- Add potatoes to the crockpot first.
- Season the chicken with salt, pepper, Italian seasoning, and paprika.
- Layer chicken on top of the potatoes.
- Make the garlic parmesan butter mixture and pour it over everything.
- Cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours.
- Finish with extra parmesan and parsley, let sit for 5 to 10 minutes before serving.
Notes
For thicker sauce, stir in more parmesan at the end or mash potatoes against the side of the pot.
