Description

A cozy and comforting dish that combines tender chicken with flavorful garlic parmesan potatoes, all made effortlessly in a crockpot.


Ingredients

Scale
  • 2 lbs boneless skinless chicken thighs
  • 1.5 lbs baby potatoes or Yukon golds, cut into bite-sized chunks
  • 4 cloves fresh minced garlic
  • 1 cup freshly grated Parmesan cheese
  • 4 tablespoons butter, melted
  • 1 cup chicken broth
  • 2 teaspoons Italian seasoning
  • Salt and black pepper to taste
  • Optional: a pinch of paprika, chopped parsley for garnish

Instructions

  1. Prep the potatoes. Wash them, cut them into chunks, and toss them with a pinch of salt and pepper.
  2. Add potatoes to the crockpot first.
  3. Season the chicken with salt, pepper, Italian seasoning, and paprika.
  4. Layer chicken on top of the potatoes.
  5. Make the garlic parmesan butter mixture and pour it over everything.
  6. Cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours.
  7. Finish with extra parmesan and parsley, let sit for 5 to 10 minutes before serving.

Notes

For thicker sauce, stir in more parmesan at the end or mash potatoes against the side of the pot.
