Description
A delightful twist on traditional South African bobotie, these filo parcels wrap spiced meat in flaky pastry for a unique flavor experience.
Ingredients

- 500g ground meat (beef, lamb, turkey, or chicken)
- 2 onions, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1/2 cup dried apricots or raisins, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup breadcrumbs
- 8 sheets of filo pastry
- 100g melted butter
Instructions
- Preheat the oven to 190°C (375°F).
- In a pan, sauté the onions and garlic in a little oil until soft.
- Add the ground meat to the pan and cook until browned.
- Stir in curry powder, turmeric, chopped dried fruits, salt, and pepper. Cook for a few more minutes.
- Remove from heat and mix in breadcrumbs; let the mixture cool.
- Lay one sheet of filo pastry on a clean surface and brush lightly with melted butter. Layer with another sheet and brush again.
- Spoon a portion of the meat mixture at one end of the pastry and fold to enclose the filling.
- Continue folding until the filling is completely wrapped in the pastry.
- Place the parcels on a preheated baking sheet and brush the top with leftover melted butter.
- Bake for 25-30 minutes or until golden brown and crispy.
Notes
Keep filo pastry covered to prevent drying. Adjust spice levels to personal preference.
