Description

A delightful fusion of South African and Mediterranean influences, these Savory Bobotie Filo Parcels feature warm spices and crispy pastry that make for an irresistible dish.


Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 500g ground meat (beef or lamb)
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 100g raisins
  • 2 eggs
  • 100ml milk
  • 10 sheets filo pastry
  • 100g melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté the diced onion and minced garlic in a pan until translucent.
  3. Add the ground meat, curry powder, turmeric, and cinnamon; cook until meat is browned.
  4. Mix in the raisins, eggs, and milk to create the filling.
  5. Layer 4-5 sheets of filo pastry, brushing each layer with melted butter.
  6. Place the filling in the center and fold the pastry to seal each parcel.
  7. Brush the tops with more melted butter and place on a baking tray.
  8. Bake for 25-30 minutes or until golden brown.

Notes

Cover unused filo pastry sheets with a damp cloth to keep them moist while working.
