Ingredients

- 1/4 cup Butter, melted
- 2 cloves Garlic, minced
- 1 tablespoon Fresh herbs (such as rosemary or thyme)
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the potatoes thinly without cutting all the way through to create an accordion effect.
- Mix the melted butter with minced garlic and fresh herbs.
- Brush the potatoes with the garlic herb butter mixture.
- Season generously with salt and pepper.
- Roast in the oven for 45-50 minutes until golden and tender, basting halfway through with additional butter.
Notes
For simplicity, use a mandoline for even slices. Store leftovers in an airtight container for up to 3 days.
