- 4 medium-sized starchy potatoes (such as Russet or Yukon Gold)
- 1/2 cup unsalted butter, melted
- Salt, to taste
- Pepper, to taste
- Fresh herbs (such as rosemary or thyme), optional for garnish
- Balsamic glaze, optional for drizzle
Instructions
- Preheat your oven to 400°F (200°C).
- Make thin, even cuts across the top of each potato, stopping just before the bottom to keep them intact.
- Soak the potatoes in melted butter and season with salt and pepper.
- Place the potatoes on a lined baking sheet and bake for 45 minutes, turning occasionally for even cooking.
- When done, the potatoes should be golden and crisp. Serve hot, garnished with fresh herbs and a drizzle of balsamic glaze if desired.
Notes
Use chopsticks to help with even cutting and avoid slicing all the way through the potatoes.
