Instructions
- Heat a non-stick skillet or wok over high heat until hot.
- Add the sliced zucchini to the pan, ensuring they are dry.

- Add garlic, ginger, soy sauce, and mirin, giving a quick toss.
- Cook for an additional 1-2 minutes until zucchini is tender yet crispy.
- Drizzle with sesame oil and sprinkle with sesame seeds before serving.
Notes
Always use shiny, unblemished zucchinis. Don’t overcrowd the pan and taste as you go. Feel free to add proteins like tofu or chicken for variation.
