Description

A warm and comforting Chicken Pozole Verde, packed with vibrant flavors and wholesome ingredients, perfect for any occasion.


Ingredients

Scale
  • 1 lb chicken, cut into pieces
  • 2 cups hominy, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup tomatillos, husked and chopped
  • 1/2 cup fresh cilantro, chopped
  • 2 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Optional toppings: diced avocado, radishes, sliced cabbage, lime juice

Instructions

  1. Sauté onions and garlic in a Dutch oven until fragrant.
  2. Add chicken pieces and brown lightly.
  3. Stir in hominy, chicken broth, tomatillos, cilantro, cumin, and oregano.
  4. Season with salt and pepper to taste.
  5. Bring to a simmer and cook for 45 minutes until flavors meld and chicken is cooked through.
  6. Serve hot, garnished with toppings of choice.

Notes

Use fresh tomatillos and cilantro for the best flavor. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
