Ingredients

- 1 lb chicken, cut into pieces
- 2 cups hominy, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup tomatillos, husked and chopped
- 1/2 cup fresh cilantro, chopped
- 2 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Optional toppings: diced avocado, radishes, sliced cabbage, lime juice
Instructions
- Sauté onions and garlic in a Dutch oven until fragrant.
- Add chicken pieces and brown lightly.
- Stir in hominy, chicken broth, tomatillos, cilantro, cumin, and oregano.
- Season with salt and pepper to taste.
- Bring to a simmer and cook for 45 minutes until flavors meld and chicken is cooked through.
- Serve hot, garnished with toppings of choice.
Notes
Use fresh tomatillos and cilantro for the best flavor. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
