- 1 pound Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups mixed vegetables (carrots, celery, bell peppers)
- 4 cups chicken broth
- 1 package (9 oz) tortellini
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh parsley, for garnish

Instructions
- In a large pot, brown the sausage over medium heat until fully cooked.
- Add the onions and garlic, and sauté until they are softened.
- Stir in the mixed vegetables and cook for a few minutes.
- Add the chicken broth, basil, red pepper flakes, and bring to a simmer.
- Add the tortellini and cook until tender, about 5-7 minutes.
- Season with salt and pepper to taste.
- Serve in bowls garnished with parsley and Parmesan cheese.
