Description

A comforting and hearty soup made with savory sausage and creamy white beans, perfect for chilly days and family meals.


Ingredients

Scale
  • 1 lb Italian sausage
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tsp dried thyme
  • 2 cups fresh spinach (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a Dutch oven, sauté the Italian sausage over medium heat until browned.
  2. Add onion, carrots, celery, and garlic; cook until vegetables are softened.
  3. Stir in the white beans, broth, thyme, salt, and pepper; bring to a simmer.
  4. If using, add fresh spinach and simmer for another 5 minutes.
  5. Serve hot, garnished with fresh parsley and with crusty bread on the side.

Notes

Store leftovers in an airtight container for up to 4 days. Freezes well for up to 3 months.
