Ingredients

- 1 lb Italian sausage
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 tsp dried thyme
- 2 cups fresh spinach (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a Dutch oven, sauté the Italian sausage over medium heat until browned.
- Add onion, carrots, celery, and garlic; cook until vegetables are softened.
- Stir in the white beans, broth, thyme, salt, and pepper; bring to a simmer.
- If using, add fresh spinach and simmer for another 5 minutes.
- Serve hot, garnished with fresh parsley and with crusty bread on the side.
Notes
Store leftovers in an airtight container for up to 4 days. Freezes well for up to 3 months.
