Description

A quick, comforting one-pan dinner featuring sausage and toasted rice that is adaptable for busy weeknights.


Ingredients

  • 1 pound raw sausage (Italian, smoked, or chicken)
  • 1 cup long-grain white rice (or 3/4 cup brown rice)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 tablespoon tomato paste (optional)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons oil

Instructions

  1. Heat a 12-inch heavy skillet over medium-high heat and add 1 tablespoon oil.
  2. Brown the sausage for 6–8 minutes until caramelized, breaking it into pieces.
  3. Remove the sausage and drain excess fat, leaving 1 tablespoon in the pan.
  4. Sauté the onion and bell pepper until softened, about 3–4 minutes.
  5. Add the garlic and cook for 30 seconds.
  6. Stir in the rice and toast for 1–2 minutes.
  7. Add tomato paste and paprika, then pour in hot chicken broth and return sausage to the skillet.
  8. Bring to a simmer, cover, and reduce heat to low, cooking for 18–20 minutes (or 35–45 minutes for brown rice).
  9. Remove from heat and let rest for 5 minutes before fluffing with a fork.

Notes

Garnish with chopped parsley or scallions, and serve with a salad or roasted vegetables for additional freshness.
