Description

A rich and creamy ice cream featuring a silky peanut butter base swirled with salty-sweet caramel.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 large egg yolks
  • 3/4 cup granulated sugar
  • 1/2 cup smooth peanut butter
  • 1 tsp vanilla extract
  • Salted caramel sauce

Instructions

  1. Heat heavy cream and milk to a simmer in a saucepan.
  2. Whisk egg yolks with sugar in a bowl.
  3. Temper the yolks by slowly adding hot cream while whisking.
  4. Cook the mixture gently, stirring constantly until it reaches 170–175°F.
  5. Chill the custard, then fold in peanut butter and vanilla.
  6. Churn according to ice cream maker’s instructions (usually 20–30 minutes).
  7. While churning, spoon in warm salted caramel and ripple with a knife.
  8. Transfer to a freezer container and freeze for at least 4 hours before serving.

Notes

For a silkier texture, consider adding a small amount of glucose or corn syrup to the caramel.
