Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cubed
  • 1/4 cup granulated sugar
  • Pinch of salt
  • 8 oz dark chocolate (60-70% cocoa), chopped
  • 1 cup heavy cream
  • 1 cup granulated sugar (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 teaspoon sea salt (for caramel)

Instructions

  1. Preheat the oven and prepare the tart crust by mixing flour, butter, sugar, and salt. Press into the tart pan and bake until golden.
  2. Cool the tart crust completely.
  3. Melt dark chocolate with heavy cream to make the ganache; pour into the cooled tart shell and chill to set.
  4. For the salted caramel, melt sugar until golden, then carefully add cream and sea salt. Pour over the ganache once it has set.
  5. Chill the tart until firm before serving.

Notes

Use quality dark chocolate for the best flavor. Be cautious when making caramel as melted sugar is extremely hot.
