Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1/2 cup high-quality dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1 cup granulated sugar (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1/4 cup unsalted butter (for caramel)
  • Fleur de sel (for finishing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, sugar, butter, and salt to create a crumbly mixture.
  3. Press the mixture into a tart pan to form the crust and bake for 20-25 minutes until golden.
  4. For the ganache, melt dark chocolate and mix with warm cream until smooth.
  5. For the caramel, cook sugar over medium heat until golden brown, then carefully whisk in butter and cream, finishing with fleur de sel.
  6. Layer the ganache over the cooled tart crust, followed by the salted caramel.
  7. Chill until set, then slice and serve with desired toppings.

Notes

Use high-quality chocolate for best flavor. Adjust salt in the caramel to taste.
