Ingredients

  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 teaspoon salt
  • 2 cups mixed wild mushrooms (shiitake, chanterelle, cremini), chopped
  • 3 large eggs
  • 1 cup heavy cream
  • Fresh herbs for garnish (parsley or chives)

Instructions

  1. Prepare the pastry dough by combining flour, butter, and salt in a mixing bowl. Incorporate the butter until it resembles coarse crumbs.
  2. Chill the dough in the refrigerator for at least 30 minutes.
  3. Roll out the dough and line your tart pan with it.
  4. Sauté the mixed wild mushrooms in a skillet until golden and fragrant, then allow to cool.
  5. In a bowl, mix the sautéed mushrooms with eggs and cream.
  6. Pour the mushroom mixture into the prepared crust.
  7. Bake at 375°F (190°C) until set and lightly puffed, about 30 minutes.
  8. Allow the tart to rest for a few minutes before slicing and serving.
