Description

A flavorful and nutritious salad combining roasted sweet potatoes and fresh baby kale, perfect for any occasion.


Ingredients

Scale
  • 2 large sweet potatoes, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups baby kale, washed and de-stemmed
  • Your favorite dressing (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss sweet potato cubes with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25 minutes until golden and tender.
  4. While sweet potatoes are roasting, wash and prepare the baby kale.
  5. Once roasted, combine sweet potatoes with baby kale in a large bowl.
  6. Toss everything together with your favorite dressing and serve immediately.

Notes

Dress the salad just before serving to keep the baby kale crisp.
