Description

Ingredients

  • 1 pie crust (store-bought or homemade)
  • 2 cups roasted pumpkin, pureed
  • 4 large eggs
  • 1 cup heavy cream
  • 2 onions, caramelized
  • 1 cup Gorgonzola cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the pumpkin until tender and set aside to cool.
  3. Caramelize the onions in a skillet over low heat until golden and sweet.
  4. In a bowl, whisk together eggs and cream, then fold in the roasted pumpkin, caramelized onions, and Gorgonzola.
  5. Pour the filling into the pre-baked crust and smooth the top.
  6. Bake in the preheated oven for 45-50 minutes, or until set and golden on top.
  7. Allow to cool for 10-15 minutes before slicing.

Notes

Blind bake the crust to prevent sogginess. Let the quiche cool before slicing for cleaner cuts.
