Ingredients

  • 4 bell peppers, halved and seeds removed
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded Asiago cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the rice according to package instructions.
  3. In a skillet, brown the ground turkey with olive oil, seasoning it with Italian herbs until cooked through.
  4. Mix in the diced tomatoes, cooked rice, and shredded Asiago cheese.
  5. Scoop the filling into halved bell peppers and place them in a baking dish.
