Ingredients

  • 2 oranges, segmented
  • 1 grapefruit, segmented
  • 1/2 cup feta cheese, crumbled

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (mint or basil) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and roast the beets until tender, about 45 minutes.
  2. Let the beets cool, then peel and slice them into wedges.
  3. Segment the oranges and grapefruit, removing any pith.
