- 1 tablespoon lemon juice
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C) and roast the beets until tender, about 45 minutes.
- Let the beets cool, then peel and slice them into wedges.
- Segment the oranges and grapefruit, removing any pith.
- In a large bowl, combine the roasted beets, citrus segments, feta cheese, and nuts.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Chill for at least 15 minutes before serving to enhance the flavors.
- Garnish with fresh herbs before serving.
Notes
This salad tastes better if allowed to chill for a bit before serving. Feel free to customize with additional ingredients like avocado or different citrus fruits.
